Reason I'm taking the alu bars is because I can't afford them carbon bars! I was able to try a bike with carbon bars (FSA) and for me it didn't actually feel different. It still gave me control, I was able to take turns the same way so carbon or alu bars, I guess it will come down to if you can afford it. I'm using Funn Full On 750mm versions BTW.
